Pumpkin Oat Bars

Now listen, these bars may not look pinterest worthy. But I promise the taste will compensate. Because, Tis’ the time of year for cozying up on the couch with a warm drink in hand, snuggled up in a blanket, with a delicious treat to snack on. These pumpkin bars are quick and easy to whip together. But, what’s even better is, most of the ingredients you’re likely to already have on hand!

Ingredients:

  • 15oz of pumpkin purée

  • 1/4 cup milk

  • 1 tspn Vanilla extract

  • 2 room temperature eggs

  • 3 cups of oats

  • 3/4 cups brown sugar

  • 1 tspn baking powder

  • 1 tspn salt

  • 1tspn cinnamon, ginger, clove, allspice

Directions:

Preheat the oven to 350. Then mix all of the wet ingredients [purée, milk, vanilla extract and eggs] together until well incorporated. Then add in the dry ingredients and mix together again. Get your casserole pan of choice. Either thinly layer it with butter to prevent sticking or crinkle up some parchment paper and then straighten back out so it will lay nicely in the pan and then pour your mixture on top. Once the oven is at 350 you can put it in and bake for 35-40 minutes, or until baked all the way through. Once cooled, cut into bars or squares for your preferred serving size.

See, that was it. Totally easy and doable. These make for a delicious lazy day breakfast, or for the scavenging mom, to satiate those *starrrrving* kids (insert eye roll), a pout luck treat, or simply just becasue you like them.

Extra tips:

Serve with yogurt for some extra protein. Make a larger batch and freeze the left overs for easy future meals/snacks. Orrrrr, you could always make a maple and fall spiced glaze to pour on top to make it a proper desert. The options are many.
